Mediterranean Quinoa Salad

- 2 1/2 cups water or stock
- 2 cups quinoa, rinsed for 3-4 minutes
- 1 cup chopped red capsicum
- 3 shallots
- ½ cup black olives
- ¼ cup red onion
- 1 cup cherry tomatoes, chopped
- 1 cup artichokes, chopped
- ½ cup feta  or goats cheese
- 1/3 cup fresh parsley
- ¼ cup lemon juice
- ¼ cup red wine vinegar
- 3 teaspoons garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste

- Bring quinoa and water or salad to boil, simmer on low for 15-20 minutes or until fluffy. Cool slightly.
- Combine vegetables in a large bowl. Stir in cooled quinoa and cheese.
- Combine lemon juice, red wine vinegar and olive oil. Salt and pepper to taste.
- Top with dressing. Serve at room temperature.
