Mediterranean Quinoa Salad

Mediterranean Quinoa Salad

 

 

  • 2 1/2 cups water or stock
  • 2 cups quinoa, rinsed for 3-4 minutes
  • 1 cup chopped red capsicum
  • 3 shallots
  • ½ cup black olives
  • ¼ cup red onion
  • 1 cup cherry tomatoes, chopped
  • 1 cup artichokes, chopped
  • ½ cup feta  or goats cheese
  • 1/3 cup fresh parsley
  • ¼ cup lemon juice
  • ¼ cup red wine vinegar
  • 3 teaspoons garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

 

  1. Bring quinoa and water or salad to boil, simmer on low for 15-20 minutes or until fluffy. Cool slightly.
  2. Combine vegetables in a large bowl. Stir in cooled quinoa and cheese.
  3. Combine lemon juice, red wine vinegar and olive oil. Salt and pepper to taste.
  4. Top with dressing. Serve at room temperature.
