Ingredients
1 cup of Quinoa (well washed)
2 cups of water or chicken stock
1 Bunch of continental parsley roughly chopped
½ cup of dried cranberries
1/3 cup slivered almonds
1/3 cup mint leaves chopped finely
1 shallot cut finely
1/2 cup lemon juice
1/3 cup olive oil

- Rinse quinoa and add it to water bring to boil then simmer for about 15 min or until light and fluffy
- Roast almonds in a hot oven for about 5 min or until brown.
- Mix dry ingredients with cool quinoa.
- Mix lemon and oil together add salt you may need to adjust amount of lemon juice to suit your taste
- Stir all together and serve.
