Antipesto meets pasta

Another meal that takes less than 15 minutes

 

 

This quick and easy meal was a hit in our family. Even the fussy teenagers ate it and complained that there was no leftovers to take to school for lunch.

 

Ingredients

2 cloves of garlic crushed

Small amount of olive oil

¼ cup basil chopped finely

½ cup of black olives

8 slices of prosciutto ripped into smallish pieces

½ cup sundried tomatoes sliced

Grated parmesan to taste

Salt and pepper to taste

2 bags Gluten Grain Free pasta of your choice

 

  1. Bring large saucepan of water to boil
  2. Cook pasta for 1 ½ minutes less than recommended cooking time rinse
  3. Heat oil and fry garlic
  4. Add prosciutto and fry till just crispy
  5. Add basil, tomatoes and olives heat for 1 minute stirring gently
  6. Add pasta allow to heat through, gently stirring for even heat for 1 to 2 minutes (taste a bit of pasta and when its aldente call the kids).
  7. Serve with parmesan cheese. Eat and enjoy (there was no leftovers for lunch at my place).
