Creamy Salmon Pasta Sauce
Creamy Salmon Pasta Sauce
Warning I do not even want to think about the fat content in this but it was really yum and was made in about 15 minutes including prep.

Feeds 4 adults

Ingredients
300g cooked salmon (I made this using left over baked salmon but you could use fresh salmon or tin salmon may work)
1 x250ml jar of light cooking cream (I tried to kept it healthy)
1 x 250ml jar of light sour cream
100g parmesan cheese
2 eggs
1 golden  bulb eshallot finely sliced        Â
4 green shallots finely sliced
2 Garlic cloves minced
Small amount olive oil
250 gram baby spinach sliced roughly (token healthy bit)
2 x bags of Gluten Grain Free Rigatoni

- Bring large saucepan of water to boil.Â
- Cook rigatoni for 3 minutes
- In the meantime
- Fry up the golden bulb shallot with the garlic with the olive oil in a saucepan
- Combine creams, egg and cheese in a bowl.
- Add broken up salmon to cream cheese mixture to saucepan  stir occasionally on low heat
- Stir in green shallots and baby spinach
- Rinse rigatoni then add it to mixture stir gently then serve
